Red Quinoa & Fruit Salad
Serves 1 - Preparation & Cooking time - 30 minutes
110g Red Quinoa,
300ml Water,
25g Raisins,
25g Pine nuts,
25g Pineapple (Fresh or tinned),
1 tbsp chopped mint leaves,
1 spring onion,
1 tbsp olive oil,
pinch of salt & pepper
